First time making braised pork leg!
I've modified the recipe from the overseas cooking page. First thing that I did was to boil the 2 pata slices (600 grams) submerged in a pot of water with 4 sliced ginger. Let it boil and then simmer for about 1-2 minutes. Flip the meat from time to time.
Take out the meat and wash all the impurities in the running tap water. Then using a scissor like the one you usually use during samgyupsal, cut the meat into bite size pieces. Separate meat from the bones. In another pot, add another water and put the meat and bones altogether with the latter over the former in the pot. Put 1 head of crushed garlic, 4 caplets of soy sauce, 2 pieces of star anise and 1 red chili chopped. Let it boil at 1500w using induction cooker and then after 5 minutes, lower it down to 200w. Boil at the lowest setting for 45 minutes.
Add 2 tablespoons of hoisin sauce, 2 tablespoons oyster sauce, half tablespoon of sugar. Cook for 15 minutes more or until pork is tender. Add salt and pepper (which I forgot until later).
