Menudillo recipe by Sanegeal Farmhear
500 g carrots, small diced
2 medium potato, small diced
3 sweet mixed bell pepper, small diced
10 cloves garlic, minced
2-3 medium purple onion, minced
500g minced beef 25% fat
In a pan, saute carrots in oil until lightly toasted.
Add potatoes and cook until translucent or half cooked
Add 1/2 teaspoon salt and freshly ground black pepper
Add the bell pepper and cook for 3 minutes. Add salt and pepper
Set aside.
In the same pan, add oil.
Saute garlic until starting to turn to light brown.
Add onion, cook until caramelized.
Add dash of Magic Sarap
Add the beef. Cook until all of the meat change color.
Add 1/2 tsp salt and ground black pepper
Add dash of Magic Sarap
Cook for some time.
Add 1 tablespoon Datu Puti soy sauce and 1 tablespoon Mama Sita's Oyster Sauce. Mix thoroughly while cooking until reduced and oil starts to pool.
add the 2/3 of the Tomato Puree. Cook in the middle of the pan the tomato puree then mix it in the meat. The meat should be dark red orange in color. Cook for some time until the oil is also like the color of annatto powder. Add more ground black pepper.
Add the cooked carrots, potato and bell pepper. Add Magic Sarap. Mix well while cooking.
Add more oyster sauce and 1 tablespoon soy sauce, pinch of salt and black pepper. Adjust according to taste preference.
Simmer for a while until you get the desired doneness for the vegetables.
